Their ciders are wild fermented with no added sulphites, unfiltered, unfined, and unpasteurized, celebrating the essence of the “Welsh Pomona.” For their beers, they use only British malts and hops, blending in ancient Welsh grains like Hen Gymro for a distinctive taste. SOBREMESA even developed a unique farmhouse yeast from Racquety Farm, combining innovation with tradition.

SOBREMESA’s commitment to sustainability shines through their organic soft fruits, grown locally near Hay-on-Wye. These fruits add unique flavours to their drinks, and their by-products are repurposed into delicious culinary creations, showcasing their circular economy model.
